Poached Pear and Ricotta French Toast
This one's for when you've got fifteen minutes and want something that feels a bit special. Warm spiced pears, creamy whipped ricotta, crunchy granola. Still quick and easy, just slightly fancier. Think weekend energy without the weekend effort.

- Griddle French Toast
- Ricotta (for whipping)
- 2 pears, sliced
- Cinnamon and a pinch of nutmeg
- Maple syrup or honey
- Granola (if you're making it you'll need handful of mixed nuts, 2 tbsp oats, 1 tbsp butter, 1 tsp honey)

Slice your pear and chuck it in a pan with a splash of water, a good shake of cinnamon, pinch of nutmeg, and a drizzle of maple syrup or honey. Let it cook on medium heat for about 8-10 minutes until it's soft.

If you're making the nutty crumb, start it while the pear's cooking: roughly chop a handful of mixed nuts (whatever you've got - almonds, pecans, walnuts), toss them in a pan with a couple of tablespoons of oats, a tablespoon of butter and a teaspoon of honey, and toast for 3-4 minutes until golden. Set aside to cool and crisp up.

While the pear's doing its thing, whip your ricotta with a fork or whisk until it's light and fluffy. Takes about a minute. That's it.

Pop the French Toast into the airfryer / oven / into a pan for a few minutes

Spread the whipped ricotta on your warm French toast, top with the spiced pear, and finish with your nutty crumb or granola.
